01 / ABOUT THE PLACE

About this place

A single ingredient reveals an astonishing range of textures and nuances at Yubani, from an opening pour of soy milk and velvety toromi yuba to crisp-fried dried sheets and succulent fresh yuba sashimi. Located in Karahashi Kyoden-cho just west of To-ji Temple, Yubani evolved out of an artisanal yuba (delicate soy milk skin) workshop. Here, multi-course kaiseki meals are crafted to draw out the gentle, savory essence of the soybean in its entirety.

Yuba remains the undisputed centerpiece across the course. Diners experience how varied preparation methods transform each dish, whether it is simmered vegetables and yuba in dashi, rich kudzu-thickened ankake sauce, or lightly crisped tempura. Toward the meal's conclusion, plain rice is accompanied by yubatsuku—a savory yuba tsukudani simmered with punchy seasonings such as sansho peppercorns, black pepper, or chili. The à la carte selection also offers playful diversions worth adding to your order, including yuba gyoza packed with fresh soy milk skin and fragrant Yubani-giri sushi wrapped with shiso leaf.

Seating is arranged in private dining rooms, providing a serene backdrop for unhurried conversation. Because each dish is served freshly prepared, it is best to set aside roughly 1 and a half to 2 hours in your travel schedule. Booking ahead is recommended, and payment is cash only, so plan accordingly. The shopfront also sells house-made yuba and simmered tsukudani, making it easy to bring home a culinary souvenir of the experience.
